Slow Cooker Cilantro Lime Shredded Chicken

There are a million ways to use shredded chicken, especially shredded chicken that tastes this good. Go ahead. Start listing your million ways now. 


  • 1 Tbsp olive oil
  • 3 limes, juiced
  • 1 onion, chopped
  • 1 lb. chicken breast
  • 1 lb. chicken thighs
  • Couple garlic cloves, crushed
  • 1/2 bunch cilantro
  • 1/2 tsp ground cumin
  • Salt and pepper


  1. Put all the ingredients in the slow cooker. Cook on low for 8 hours.
  1. Once cooking is complete, use 2 forks to pull the chicken apart. Pull out any long cilantro stems, if necessary.
  2. Serve Cilantro-Lime Shredded Chicken in favorite chicken recipes.
  3. Portion out chicken into meal size portions and place in plastic freezer baggies and freeze for future use.

This looks amazing!! And very easy!!! Would be so excited to feature this for a MOPS cooking class! :)


My son is a die hard Chicken noodle soup fan, so I use shredded chicken to make his soup. If I make pulled chicken in the crock pot or roasted chicken on the grill, it all gets shredded and put into my soups.


I made this recipe for my family and it was so good! It will for sure become one of our regular meals!


We do something similar to this frequently! It is one of my go-to meals. I do wait, however, to add the cilantro to close to the end of the cooking time. I also like to add bell pepper to the crockpot. This does wonderfully with beef or venison as well!
